Let's tackle the real rogue in your diet: fat overload. When your system becomes glutted with fat, the resulting free radical proliferation disrupts cellular homeostasis. In an effort to correct the imbalance, your body produces excessive amounts of cholesterol. When you reduce fat consumption, you reduce free radical generation. As a consequence, your cells, given a chance to recuperate, will reduce their cholesterol requirements and cholesterol levels will drop. In all but a few exceptions, this strategy works.
So fat is bad. Too much fat is very bad. But some fats are more evil than others. The most villainous of the lot are the adulterated fats, primarily because they are the most prolific free radical generators. This is an important distinction, especially since it means the saturated fats are far less offensive than the supposedly 'good-for-you' polyunsaturates, which are so zealously - and wrongly - promoted by the anti-cholesterol food mongers.
